We finished up our third and final week of the raw module! This week we had some more international cuisine, delicious desserts, an iron chef challenge, our practicum and written final, and our second recipe testing day for the final event. Time is going so quickly!
We started the week off with delicious raw versions of classic Mediterranean food, as well as some different dishes I was less familiar with. We got to make some dolmas, tabbouleh, and even raw falafel! These are foods I’ve grown up with, so it was extra fun to see how great the raw versions are. We had a feast with the beautiful flavors, followed by another amazing Mexican feast on Tuesday! We made raw enchiladas, tortilla soup, Tex-Mex salad, and so much more. The enchiladas were some of the most delicious ones I’ve ever had, and the rest of the class seemed to agree. It’s really cool to see how many yummy soups can be made raw as well. After these international days, we had a raw chocolate day! I was skeptical, I’ll admit, but oh my goodness it was all so good! We all got a bit of chocolate overload, but it was worth it. We learned how to temper raw chocolate so it has the shine and crack that we’re all so familiar with. We’re all pretty stocked on awesome chocolate for a while.
On Wednesday we had our practicum exam, which was much less stressful than past practicums. We each made three items, which we were told about ahead of time to cut down on the anxiety of test day. Not using the ovens or stoves definitely made it a more leisurely exam. On Thursday we had an Iron Chef challenge! We were put into teams of two and had to come up with a drink, entree, and dessert utilizing things we had made during the course of the module, as well as some fresh produce. It was a lot of fun coming up with our own recipe ideas and seeing them through. My group made a coconut lavender tea, kale salad with garlic miso dressing, vegetable noodle dish with falafel ‘meat balls’ and a ginger tahini dressing, and finally a mint chip coconut ice cream using the chocolates from chocolate day. So delicious and so much fun! Congratulations to Robson and Lori for their Iron Chef victory! We closed out the module with our written and product ID test on Thursday afternoon.
On Friday, we had our second recipe testing day for our final event. We each brought new recipes, or altered recipes from the first round, to try out. Everyone’s dishes were amazing! It’s going to be tough to narrow it down. We only have four weeks left! Time for our final module, Macrobiotics, with Chef Rachel!
