Chef Rae is the Chef Instructor for many Public Classes at Natural Epicurean.
Get to know her and her cooking style in this brief interview.
What led you to Natural Epicurean?
Falling in love with raw food got me interested in pursuing a career in a culinary field. I took a few public classes at Natural Epicurean before going to an all raw culinary school in California, Living Light Culinary Institute. Six months after leaving that school, I enrolled at Natural Epicurean because I liked that they taught a more well-rounded culinary education than just learning raw alone. I graduated in September 2015 and have worked for the school since February 2016 as a Sales & Operations Assistant as a chef instructor.
What do you love about teaching public classes?
I really like interacting with people and teaching others tips and tricks on living a delicious, low-maintenance, plant-based lifestyle. My favorite part is the end of the class when everyone is proud of the food they’ve made, the new friends they’ve made, and their full bellies.
What can students expect from your classes?
I am a nutritional therapist, so they will likely hear me talk something about how to increase the nutritional value in the foods they make or how to replace processed foods with whole foods. I love date paste, so I’ll likely mention that!
What inspired you to create this Meatless Monday Menu?
Really, I looked at produce that is in season and drew inspiration from that. I usually have some kind of soba noodle salad on my menus, so that’s a given! Summer is my favorite time of the year (I am a Pitta dosha after all!) and I love the peaches and watermelons in season, along with one of my all-time favorites: eggplant! That’s why all of those are included in this menu.
3 things you want public class students to take away from your class?
- To know that’s it’s ok to not know everything all at once.
- To do only what you can do for your own personal situation.
- To experiment and not be afraid to try new things, whether that be a new vegetable, cuisine type, cooking style, or kitchen appliance.
Secret food passion or specialty?
I love desserts! All things desserts!
