Chef Charlotte is a Lead Ayurveda Chef Instructor and a Certified Ayurveda Practitioner with the National Ayurvedic Medical Association (NAMA).

This lentil cake recipe is vegan, savory and loaded with protein. These cakes are crispy but light and when paired with a red pepper coulis, a balanced and elegant entree comes together quickly. Although these cakes take a little hands on time to prepare, this recipe makes a large batch making it perfect for batch cooking. Simply freeze extra cakes in an airtight container and reheat them in the oven when ready to eat. You can heat as many as you like, and save the rest for a later meal.
