The Start to a Great Adventure
As I start my second week at Natural Epicurean Academy, I am 100% sure I made the right choice coming here. In the first week I have already learned so much and experienced some fun new things. It is a breath of fresh air being in a place that is filled with people who understand why someone would have a plant-based diet, and not being looked at as kind of a weirdo. Leading up to my first day of class I was so nervous that everyone was going to be intimidating and that I would be so behind all of my classmates, but after the first day my fears subsided. My classmates are wonderful, and the staff and teachers really do genuinely care about their students and their success, and they aren’t scary Gordon Ramsay-esque chefs that think yelling motivates.
In this first week we started learning about things like the history of culinary arts, herbs and spices, and flavoring. We got to bust out our fancy new knives and start learning about cutting techniques like dicing, julienne, mincing, rondelle, chiffonade, etc. My favorite techniques so far are square and supreme. I was quite excited when I completed both knife skills labs without cutting myself once! Precision cutting is harder than it seems, though, so I’ll definitely be buying a lot of practice potatoes.
We spent Friday on a field trip to the flagship Whole Foods. I hadn’t been to this location before that, and it was a glorious experience. The store is amazing and has everything one would want. We learned about the history of Whole Foods and their current and upcoming programs to help the larger community. I am very excited about their upcoming project entitled “Whole Cities”, which aims to help underserved communities have better access to healthy foods and give money back to the communities. It will be very cool to see how that program turns out.
I am going into my second week of school so excited for what will be coming next. This is going to be an amazing six months of learning!
